Recipe: English : Port-basted Turkey

Port-basted Turkey:


Ingredients :

1 turkey breast
Small glass of port wine
Rind of 1 orange
Juice of 1 orange
Rind of 1 lemon
½ glass of dry white wine
4 soup spoons butter
Salt and pepper

Making :

Place the finely diced lemon and orange rind in water. Heat and move from the heat when the water begins to boil. Strain. Add the port wine to the lemon and orange rind. Leave to marinade. Season the turkey with salt and pepper, add the orange juice, dot with the butter and place in the oven. From time to time, pour a little of the white wine over the turkey. When the meat is cooked, remove from the oven and cover with the port marinade with the lemon and orange rind. Serve.

Serve with a Great “Alentejo” Red Wine: http://www.esporao.com/ or with a 10 Year Port Wine
